Personally if you after value then I would suggest the X100F, the handling is much improved (with a joystick for AF points), its noticably snappier AF than previous models, takes a higher capacity battery. Also meets your face/eye detect and electronic shutter requirements.
If you want all the latest features then the X100V is the one to go for, but this is really holding its value at the moment as new supply is thin on the ground. Its lack of availability is having a knock on effect on previous X100 cameras, but as soon as supply improves I would expect to see the X100F back to the £550-£600 mark.
Manual focus has always been a bit sketchy on the X100 series.
But if you want the nicest colour rendition then IMO (and that of many others) then an original X100 is the one to go for, but that comes with a very pedestrian user interface
