Nikon D5000 and 18-55mm would be a good start - a friend bought one last week and I was quite impressed with it. Easy to use; light; great image quality and VR built into the lens - another £130 for a 55-200mm VR eventually and you're more or less sorted....
Being as good glass is the be all and end all how about something like a second hand body,Canon 400D Nikon D80 and put the rest towards a decent standard zoom
As Cris_L mentioned, a Canon 450D is a great camera, I know fellow skydiver cameramen who strap one to there helmet and abuse it for years, up to 10 exits a day with faultless results
