Do they even grow carrots in italy?

And No aubergine?

Start by roasting a selection of fruit and veg - tomato, pepper, aubergine, courgette. season and blend to your prefered texture. Use good quality tinned tomatoes if you must.

Make a good cheese/white sauce.

use basil. I tend to slip a little chilli in as well just to give a bit of pep.

So what, you're anti carrot now? It's not what you put in put how you cook it. I cook food with influences from all over the world but you judge purely on the fact that I use carrots? :shrug:

As for Europeans, it's well known that the only thing the french can cook is sauces and they were only invented to hide the taste of the rest of their food. ;)

Carrots in lasagna brings back too many bad memories. A place I worked once had two veg options. 1:curry with whatever fruit/veg was left over from the previous day. 2: lasagna with sauce made from carrots and tomato. Sometimes - if we were very good - we had some courgette as well.

So there you have it. To me, carrots in pasta sauce is wrong.

Fair enough, that lasagna sounds pretty horrendous but then I don't like tomatoes. :gag: I should have mentioned though that all the vegetables are roasted which I think makes a major difference. Roasted carrots have a completely different texture and flavour and go very well with pasta sauce.

I'm gonna have to make this over the weekend, I'm starting to drool! :D
