Problem is I'm not intending to do a meat lasagne for the rest.
Having said that, I'd be interested to see what you'd want in a vegetarian lasagne. Name me some ingredients?

Start by roasting a selection of fruit and veg - tomato, pepper, aubergine, courgette. season and blend to your prefered texture. Use good quality tinned tomatoes if you must.
Make a good cheese/white sauce.
use basil. I tend to slip a little chilli in as well just to give a bit of pep.

Carrots in lasagna brings back too many bad memories. A place I worked once had two veg options. 1:curry with whatever fruit/veg was left over from the previous day. 2: lasagna with sauce made from carrots and tomato. Sometimes - if we were very good - we had some courgette as well.
So there you have it. To me, carrots in pasta sauce is wrong.
