I think there are laws about leaving bullocks alone in fields. That's why cows kill more people because nobody suspects them ;)

Castrated male cattle of any age are normally referred to as bullocks, hence my saying that's what they were in the picture, normally raised for beef in this country

Steers in the Americas....different names in different places, but most will wind up on a plate.
 
Does the castration contribute to a better flavour?

Don't know TBH think it's more to make them easier to handle, calms them down supposedly, they still seem to follow you through
fields though.

In Asian countries they use them as working animals to pull carts/plough etc.
Probably they end up as food when they get too old for that
