Just went to set the bios to AHCI and I do not appear to have an option to make this change anywhere in my BIOS.
Any ideas as to why this is?

I limited by my processor as to what mobos I can go for, they have to be socket 1156

That should not be a problem though. Just lift the processor and heatsync out of your old mobo and replace on the new one - same cooler should work and you won't need any more paste (unless you actually remove the cooler)
I can't recall any processor changes I was able to do like that?
The CPU clamp almost always gets in the way of the cooler.

I'd ditch the ram too and buy fresh, more chance of compatibility. I had a mare with one sandybridge board and memory.
