Low Carb High Fat

Well who needs spuds?
Celeriac chips were delicious. I parboiled them then tossed them in paprika, oil, sea salt and black pepper.
Spread them on a tray in the oven and half way through cooking I put a few cloves of garlic in to roast.
I'll certainly be having them again, might cut them a bit chunkier though or do them like roast spuds.

Well i was at a loose end tonight as to what to accompany my burgers, bacon and cheese so a quick pop into Tesco and i have a celeriac :). Parboiling currently and going to do them with rosemary and some chilli flakes.

Glad I found this thread, having lost nine pounds since giving up bread and having a major carb-reduced diet about three weeks ago. I seriously missed the bread at first, but have been surprised how much better I feel, and just don't feel constantly bloated anymore, which is great.

I changed my diet as I needed to lose some inches off my waist seeing as I have started going to a gym, mainly weights as we walk a lot anyway, and already am finding my trousers too loose!

Some good ideas for meals on the thread, I must try the celeriac chips soon (Have been eating sweet potato chips). Have unfortunately been eating brown rice with chilli, what on earth is cauliflower rice?
 
The chips look like they have spent the night in the kitchen waste bin. Sorry about that - I do welcome your post (and others) as I am looking for appealing low carb ideas.
They tasted better than they looked thankfully :)

I hope thats low carb tomato sauce you've got on there :ROFLMAO:
Low sugar only but vaguely measured out so i know how many carbs, not paying the silly money for the low carb imported stuff!

Its grated cauliflower, cooked in microwave with butter and salt for 3-4 mins, serve as a substitute for rice.

Can that be bought ready to cook, Marie. I'd want to have with chilli or curry etc.

I've never seen it ready grated, but its a quick blitz in the food processor and your good to go. If you've no food processor then a cheese grater will do the trick but it takes a little longer.
 
I've never been into avocado or guacamole but today that's changed.
Had avocado with my salad for lunch and I've made guacamole to have with chilli and roast veggies for dinner.

I was exactly the same but avocado has become one of my faves. The other night I wasn't in the mood for cooking anything serious so I just had pork chops with melted cheese and mushed up avocado on top and it was awesome!
 
I've reminded myself this morning why I don't 'cheat' (although I don't really like that term) very often. A few slices of pizza and some (well a full tub) of ice cream has left me reeling. It's amazing the negative impact that it has once you do cut the carbs, although I have to say I did enjoy it last night!

But one of the best things I find about LCHF is the ease that I can get straight back into it as it really is a way of life rather than a 'diet'.

Tonight I grated cauli florets then stir fried with some pilau seasoning. I had it with chilli that I made in the slow cooker today. It was really nice despite me adding too much of the pilau seasoning (it is very salty), but that is easily sorted next time. That cauli pilau rice will be super with a curry.

I don't put kidney beans in my chilli, but use Branson baked beans after washing off all the tomato sauce in a colander.

Any idea what is the carb content of baked beans minus their sauce ?

No big deal omitting them from the recipe. They only add a little bulk and no flavour.

Haricot beans (the actual beans in baked beans) are 10.6g carbs per 100g, so not the worst but still pretty high.

So checking in again. Since starting i've now lost 1st 1lb and a notch and a bit on my belt (soon be two notches) which i'm pleased with :).

Its taken some adapting too when you're the main cook in the house for the five of us. So i still cook the kids treats like pizza, chips or simple stuff that i can't have e.g. cottage pie, roasts with a roast dinner etc. Just have to come up with alternatives which i'm fine with (like a bowl of spagbol but the instead of spag i switched to rocket salad and mixed it altogether, yummy). Got used to the bulletproof coffee's now and i have to say they are very energy sustaining which means i can save my carbs for a main dinner in the evening. Love the fact that pork scratchings (non-msg ones) are basically a 'free' food in terms of snacks as they have virtually no carbs. Also making sure to take vitamin supps as well.

What i have struggled with is alcohol, while i've pretty much given up beer, rose, sweet wines etc. (once or twice i cheat) i still enjoy my JD and vodka. When i say enjoy i really mean enjoy, so there are times when i've stalled weight loss due to my liver processing the alcohol vs fat. Something i just have to watch for and simply accept but again not a problem just a reality of the situation.

All in all very pleased and something i can certainly stick with easily until i hit my desired target / body profile then look at how to reintroduce things i've taken out of my diet without trashing all my hard work :)

I've found a yoghurt made from coconut milk so its also dairy free, gluten free.
Co Yo is sold in Tesco, not cheap but you only need a few spoonfuls per portion due to the fat content. There's only 0.5g carb per 100g in the plain variety.
You have to like the taste of coconut though (which I do!) and it would be nice with low carb granola or fruit (berries etc)
They make ice cream too but I haven't been able to track that down yet.

That CoYo looks woth a try.
Low carb granola would be great too, but all the recipes I have found produce about 10g carbs per serving. That bit does my head in when I see a serving quoted as half or quarter of a tea cup. Not worth the bother when servings are baby sized.

Maybe i missed it but where are the carb count on their site?

I've just ordered some of coconut oil from Amazon, much better value than the ASDA / Tesco organic cold pressed options (£5.99 for 285ml). These are two 500ml for £14.99 :)

Finally had some of these tonight after finding them 2 for £5 in Tesco. Opted for the chicken italia version which wasn't bad, not something i'd rush back to but certainly a nice change once in a while (frozen the other packet).

As for my progress i've now hit 1 1/2 stone loss and comfortably two belt holes smaller. Got to the point now that i'm not sure how much if any i want to lose as i'm very happy with my current size apart from needing a new wardrobe! Plan on maintaining my eating choices and just have the odd treat which i've managed with so far inc having a Zinger burger, a few hot wings and some fries over the weekend without undoing my work. Not sure how i'm going to cope come Christmas however, so much lush food to choose from :D
 
Another update!

So since starting at the end of Aug i've now lost a total of 2st 5lb. Can't tell you how pleased i am with that. I'm down to a weight i'm very happy with and have reintroduced more carbs back into my diet but know not to go mad with them. I've got into clothes easily that i barely got into when i first bought them lol. But my larger sized jeans, combats etc. now just gather on me and look daft. Got used to the meals and things i'm eating no problems which is a big thing about the sustainability. @EspressoJunkie 's bulletproof coffees work wonders in the morning and are sometimes supplemented with a few rashers of bacon.

All in all actually pleased to see a mirror these days :D
 
Just out of curiosity what are people's blood pressure readings like who have sustained this for a while?
 
I notice that food labelling mentions the weight of carbs and sugars per 100 g. E.g. 40 g carb. of which 4 g is sugar. I understand it is the carb figure that is counted in the daily allowance. What is the point of the sugar figure and is it of relevance to wieght loss ?
