I'm after a little bit of advice...

I want to shoot some grainy negatives in low light conditions on my Mamiya 645. Would I be better to buy some Delta 3200 or to push HP5 by 2 or 3 stops?

Both will get you there, but for intentionally excacerbating grain the latter is probably the better option. Don't forget that at box speed most film emulsions are designed to be as technically perfect as possible, so Delta 3200 will be as grain free as possible for a fast film. HP5 pushed several stops, on the other hand, is likely to be far more grainy.

Developer choice influences grain as well.
 
Anything pushed in Rodinal is likely to be grainy, I should think.

Whilst dev'ing agitate a lot with your HP5+ as I found that made my negatives rather grainy! :} That is, if you dev yourself of course.
