The Nikon - X adaptor I have is designed to work with G lenses. There's a small lever on the side that move about half an inch. That's it from f2.8 - f22 (or whatever). There's no way of knowing what aperture you have set apart from how far you move the lever - but it kind of gives you min, max and somewhere in between.
The very nice thing is the viewfinder gains up so you can leave it set at f22 all day if you like.
ETA: that Dungeness pic above was shot on a Fuji X-E1 with Sigma 8mm in a Nikon fit which has no aperture ring. I was aiming for somewhere around f11 but it's hard to tell on a fisheye
