Does your grpahics card give you the option? Did you want it, for example, on Photoshop so that your tools/windows is on one monitor and your image on the other?
I use dual display - find it really helpfull. Takes a bit of getting use to, but really handy for just putting stuff to one side whilst working on something else. For example now I have Radio one playing online on the right hand screen and Chatzilla (in the talkphotography room) and on this screen I have firefox and photoshop (minimized) - just gives you more room to play with really(not sure how good double the radiation from two monitors is though!)
I used to run 2 monitors, but tried one 30" and its made my workflow faster.
So I just run 1 30" Apple Cinema Display.

30" is equivalent to approx 2 x24" displays.
So loads of room for everything, superb for when i need to edit HD video streams for clients DVD's, as you can have numerous streams on display at once without loosing editing controls.
