A couple of knives turned up today, only a fortnight after ordering them from Gearbest, using free delivery:banana:

Love the colour and comfort of the G10 handle.

Both quite sharp out of the box but less so than other Sanrenmu knives I have had.

Wee strop sorted that though!

What do you guys use for honing and sharpening, any preferred techniques?
 
I keep changing my mind on that. I have a small Fallkniven CC4 ceramic stone which is good, then again I also have a bench grinder with a rotating whetstone which is also good, then again I have an India stone which is old and very hard which is also good... oh and a leather strop with a couple of different kinds of polishing compound.

I've seen a few Kamisori honing videos lately, and those stones look amazing.

Here's one. I mean, how sharp is that!? (He even polishes the edge to give a butter-smooth shave. :eek:)

Crock sticks work well and these are reasonable priced: http://www.amazon.co.uk/Lansky-Shar...1454564895&sr=8-1&keywords=lansky+crock+stick. There's a larger set which is easier to use with long blades, and various other manufacturers have their own versions.

Lansky's Sharpening System is good and has a range of sharpening stones that cover just about everything. Bench stones (Arkansas stones, Japanese water stones etc) work very well, but all these freehand sharpening methods need practice to keep the blade steady and at the right angle.

Whatever system you use, strop the blade after you've sharpened it. This cleans up the microscopic burrs on the edge and sets it properly. You can use a leather belt, but cardboard, the edge of your half open car window or a drinking glass will do.

A couple of thoughts to add to my suggestions above. Crock sticks are probably the easiest way to get a good edge if you have no experience in sharpening, but it can be time consuming/challenging if the blade is very blunt and you have to reset the bevels. I'd recommend getting the knife professionally sharpened to get you started, and using crock sticks - or whatever method you prefer - to touch it up as necessary.
 
I have the Lansky one that Martyn linked to.

It is very easy to use and puts a nice edge on everything (though I had to put a different angle on a Damascus blade and it took a fair old time).
 
Nice additions Mike I have the sanrenmu also,great little knife.I also use the lansky sticks and a strop.I did ponder the wicked edge pro but far too much money for me to justify when the sticks get the blades as sharp as I would need.

Just ordered a couple of cheapies from HH..A fixed blade and barlow pocket knife.
 
I just want a couple of nice fixed blades for when i go fishing

Watch your fingers! I have that set and it's a dangerous thing as well as not being very good at what it's supposed to do.

The stone handles are shallow and the action of sharpening takes your fingers very close to the edge of the blade. Also the knife clamp is a poor design, it is ok for wide kitchen type knives but it's no use for narrow blades, you can't get a proper angle on them without coming up against the clamp itself.

Sorry m8 :) read some of the 3*,2*,1* reviews on Amazon, it is possible to get a great edge on a knife but it needs to be the right kind of knife.
 
I've been using a Lansky system for donkey's years. Never cut myself, but I can see why some people don't care for them and you do have to pay attention while you're sharpening.

The standard/deluxe kits work well, but the only difference is a couple of extra stones. These don't make it any easier to get a good edge, and I'd rather have the standard kit and a couple of diamond stones. I wouldn't bother with the sapphire stone and leather strop. One thing that makes a big difference, and should be included, is the C clamp or, at least, the pedestal mount. Holding the knife clamp in one hand and trying to sharpen with the other gets uncomfortable, and it's difficult to maintain pressure and keep the angle consistent. It's a lot better/easier and probably safer to have a mechanical support for the clamp.
 
Cheers both for the replies..I did go for a clamp as an add on item which i was going to screw to a 12x12" piece of wood.Did look at the kme sharpener on HH but its almost £200 and looks very similar tbh in practice.

The stones are good and if you can't use them on the system you can use them freehand or mounted some other way.
 
The one with the rods is fine for me, Stuart, although I would like to know if you can get spare rods?
 
Yeah i have the lansky turn box with four rods but just fancy taking the sharpening up a notch..think HH sell the rods seperate

Yeah saw that recommended in a video i watched earlier hugh...I think i will stick with it and give it a go for the price,cant warrant the cost of the next step up.Well I could but mrs will kill me after spending over a hundred on knives this week.:exit:
 
lol Mike yeah not to keen on the lack of clamp for the knife..sod it will give the lansky a go I think.May have its faults but seems most do unless you spend hundreds on a wicked edge pro.
