Whenever I go to Anglesey, I tend not to be going to take photos. But these are the areas I would go to find wildlife:
Gogarth area for nesting birds - I know there are climbing restrictions on there from February to July. Likewise for South Stack. For bird life, I should imagine anywhere coastal will be good, the Menai Straits will no doubt have waders at low tide as it is muddy.
Newborough Warren and forest is a nature reserve, so there should be some wildlife around, if not there should be some good opportunities for landscape / sea scapes.
I think there is a sea life centre / zoo thing somewhere, and also a butterfly place too if that tickles your fancy (I haven't been to either, so can't comment on how good they may be)
