The second has blur from camera shake which was caused by the slow shutter speed. You said that you used f/8 for the first photo, even if the camera focused on the fence the DOF will extend to infinity.
The photo that you posted is too small to be able to identify any problems with sharpness...
The 20D and 30D both have magnesium alloy bodies. The 10D isn't compatible with EF-S lenses and you may also encounter problems with your adpated lenses.
The Samyang is made for APS-C, it will still mount on the 5D but the built in lens hood obscures part of the image, though this can be shaved the image circle is still too small for the 5D.
There are some examples of the Zenitar and the Peleng on a 5D MkII here...
There is a Zenitar 16mm full frame fisheye at around £125 new and an 8mm circular fisheye made by Peleng for around £250 new. They are both completely manual, manual focus, manual aperture and no AF confirm. The only sources that I can find are on Ebay.
I think that is the smallest zoom that I have seen :), its performance looks reasonable too. I noticed that you have the Vivitar 28mm close focus, I have the same lens in OM mount. It is a great lens and very sharp wide open.
UV light will bleach the yellowing so you could use an alternative UV source to the sun. Maybe take the Takumar on a trip to a tanning booth :D.
I haven't had any experience of the Kood adapter, but have read that they are OK.
The D40 won't meter when using non CPU lenses, you will have to either use a handheld meter or "chimp", which is to take a photo and use the histogram to see what settings to use.
If you are using M42 extension tubes you will need automatic ones, these have a pin going through each section. If you have Sony mount extension tubes then you just put the adapter onto the lens and mount it onto the extension tube.

The adapter keeps the pin depressed and you can change the aperture...
Do you change the white balance for different light conditions? The white balance should be set depending on the colour temperature of the light on the subject, so you can't use one setting for different light conditions.
It is easier to correct white balance on a RAW image.
