I always use it for video, if during recording I want afew pics as well then just stop recording, let autofocus settle and take a pic, press the record and we're back to recording. This also means you can use the af to get focus right and not have to use 5x or 10x zoom but then again on a 7D...

If its a long focal length what was your shutter speed? The longer the focal length the faster the shutter speed needs to be in order to avoid motion blur. At 90mm you should try for around 160th of a second or faster, at 300mm you should e around 500th of a sec

The autofocus will work exactly the same in all the different modes, The camera screen isnt exactly HD so you wont see the best image, Are you using the kit lens? The IS version or the non IS? The non IS isnt brilliant How does it look on the pc? Can you post a sample to show?

As previously said the best way to learn would be look online/youtube. The problem with prem pro cs6 or any Editor is that they look complex and daunting to begin with but are pretty straightforward after afew days of use. Theres multiple ways of doing things which gives the exact same end...
