Your workflow for portraits specifically for cutouts?

I am doing a lot of photomontaging currently and am experimenting with the best and quickest way of getting a shot that is easy to mask in PP. Just wondering how everyone else does it - what background do you shoot on, what plugins if any do you use after the fact? I don't have a proper greenscreen backdrop to try, but have read that they can introduce more problems than they solve, especially in separating hair from a background. Currently I'm shooting against grey or white, both of which work fairly well. Hair is of course the most tricky part.
