I've always liked something snappy, and medium wide/normal, so my three faves [I've owned] are
Nikkor 35mm/1.8,
Sigma 30mm/1.4,
Voigtlander 40mm/1.4.
The old sigma in particular has a lovely rendering, the right sort of soft wide open. I think of it as the 'Nokton' or 'Summilux' on my little D3100!
