Yes
Can I control my Yongnuo YN560 III by using a Yongnuo YN622N transceiver (on my Yongnuo flash) and a Yongnuo YN622N-TX controller on my camera?

I can control the flash power by using the transceiver and controller when using my Nikon flashes, but can't seem to control the flash power in the same way using my Yongnuo flash.

Hope this makes sense.

Cheers.

No
622s control flash power using the CLS communication protocols (ettl with canon), the 560 doesn't have the contacts on the foot.

Why not just buy the 560tx?
Because it won't control his Nikon flash? :p
Less flippantly, he's better off with just one trigger type to keep things simple and he already has the 622s.

Though TBH having just one flash that you have to adjust manually isn't often that great a hardship. For 1st dance I often use my 560 at 1/4 power and adjust the other light around it. And in any static situation I generally use Manual settings and having only one to adjust in situ isn't too bad (make it the closest flash to the camera)

I've got a similar predicament - I have the Yongnuo YN560 III and a YN602 transmitter, but am about to upgrade to a YN622.
Would I be able to use the 560 with a 622 receiver manually?

You can use it to trigger the flash. But not to control the power.

Bit late here but and may be wrong. Why not buy a couple of the Cactus V6 transceivers? I keep seeing people asking about can I fire or can I control the power on my flash? with the V6 transceivers you can even mix and match your flash makes and a lot more. I use three Canon 540EZ (yes EZ) units along with two old type Sigma EF-500 DG Super and a Sunpak 4000AF with the Cuctus and control power output on differant channels.
