Yesterday I got upgraded to BT infinity fiber optic.

Will it make any difference to speed what ethernet cable I use for the xbox one online gaming?
 
I've used all sorts of cables for the Xbox one or PS4 and not noticed any difference between good ones or "bad" ones.
 
according to specs the port is gigabit but if plugged into the standard broadband router which will be 100mb so pretty much hairy string will do it.
 
For xbox live not really much difference, however, if you make use of the steaming media features using your local network then using a cat 5e or 6 would have better performance within your lan. Most modern routers have gigabit switch these days.
 
It will make zero difference for any cable manufactured in the last 15 years, guaranteed.

Although people may not notice much difference between cat 5 and cat 5e/6 cables they are different and the latter do have better performance.

1000BASE-T (Gigabit) cables and devices have 2 additional cables, an addition 'twisted pair', along with additional electronics which allows both ends to transmit and receive at the same time.

Cat 5 - 100BASE-T
Cat 5e/6 - 1000BASE-T

Provided all devices are 1000BASE-T, Gigabit network card, gigabit switch and cable then the performance will be quicker. Depending on what it is you are using the network for will have a great influence on whether you notice though. Regular use probably not so much but transfer larger files around (do a backup) and you should easily see the difference. *using the internet will see no difference as the ISP connection will be the lowest denominator usually.
This assuming there are no other bottlenecks in the system, all the auto negotiate signals are working correctly etc.
 
Yes, there are differences. You just WILL NOT SEE them in real world conditions with a games console. Switches, hubs, repeaters - hard and fast rule, they either support 100baseT or 1000baseT, yes. Cables? Not so much. With a short cable run between two gigabit devices cat 5 vs cat 5e is very very very unlikely to make any difference at all. I think it very unlikely anyone still has Cat3 cable around

That's more or less what I said, in the home you may not notice the difference.
Your last point though is incorrect. Cat 5 vs Cat 5e over a short cable run with everything being gigabit devices, you will see a marked improvement providing everything is configured correctly.
 
We could always bring Jumbo Frames into the mix :-)
