Would upgrading from my 300D to a 40D make much difference?

Yes
I'm just wondering whether a camera body upgrade would make much difference to the quality of my images? I currently shoot with a 300D and range of L lenses. I mostly shoot landscapes and sport.

Yeah the image quality would be much better on a 40D than a 300D.

The 300D isn't really good enough to make proper use of L seris lenses actually, so from the lens alone there would be a big improvement.

The sensor is not only better quality, but far more sensitive, I noticed a big difference between the 400D and 40D sensitivity wise, I found that I could get alot more detail in.

I upgraded my 400D to a 40D. Technically the cameras aren't that different, but the 40D is much nicer to use. The 300D is still a very good camera, but technology has moved on considerably and the 40D will be much quicker (in terms of FPS and storing images to the card) and handle things like noise better. You'll also get the benefit of higher resolution images than from your 300D.
Hard to say whether the quality of your images will improve, but they certainly shouldn't get any worse!

The quality of your images will vastly improve, but your photography won't get any better (obviously :p).

Comparing a 350d (I have one) to a 40d (I regularly play with them at work), the difference is substantial.
The 40d's screen is much bigger, which makes a huge difference.
There are 2 wheels to change settings, rather than one, which makes a huge difference.
The settings screen is on the top, which makes a huge difference (recurring theme here :p).
The noise control is far better, meaning shooting at higher ISO's, theres a lot less noise.
There are more megapixels, meaning that cropping is less intrusive.
Ergonomically, the 40d feels a lot nicer (not everyones taste, mind).
There are more buttons to try and figure out what they do (again, not everyone's taste).
There is a joystick to navigate the menus, making a big difference.
It has live view, which makes composing difficult-to-see-through-the-viewfinder shots easier.
It has more frames per second, meaning you could capture that all important shot.

There are various other things, but I can't think of them off the top of the head.
In a nutshell, YES! UPGRADE!

I went from a 300D to a 40D

For sport it's great. The 300D had a slight lag from pressing the shutter to taking the pic so you had to slightly anticipate, the 40D is instant, and has 6.5 frames a sec with a huge buffer. No more taking 4 shots then waiting ages for them to write.

10Mpixel rather than 6 means you can crop so I take a little wider sometimes.

plus the bigger screen is great
