No idea but we were supposed to be doing a night club experience at a local hotel last night for a companies works Christmas party, and they cancelled the entire party the morning of the party, I don't know what the company was but it's a sure fire bet that the employees were annoyed at that one

twas a pre-paid tab. anything above and beyond came out of staff wallets.

Where was the party, hotel, bar, pub, function room?
It's probably a damn sight cheaper to book a party mid week than it is on a weekend too
They also probably do it to discourage excess drinking as they know you need to be in the office the following day
Either that, or the party organiser is a total killjoy

The probability of people coming out for a company do on a Saturday is probably greatly reduced due to the people who want to do their own thing.
I did ours last Friday, the 3 people who went home at 10pm would of been the only people in a fit state to work if we had to come in the next day.

I remember about 8 years ago doing a presentation to a grant funder while still half cut from doing shot races the night before (that was someones leaving do rather than xmas but same difference)
My Boss: We do lots of great community involvment projects don't we pete

Fortunately my boss was something of an innocent and bought my explanation that it was " umm gastric flu or um something "

Let's assume the do will be in Nov or Dec - that's 8 nights of no working day following. Odds are that those slots will be filled months (possibly years!) in advance, leaving 40 work nights available for the "late" bookers.
