I have been asked to shoot some products for a company who are exhibiting at au up-coming trade show in Germany and have a small query. They plan to print some large scale images for their stand. I have shot in RAW and normally edit and convert to jpeg at 300/350 dpi. Should I save at a higher resolution for these pics, or also save in a different format such as TIFF?

It would be best to ask what format they require. Commercial companies often ask for Tiff files, but if this is a contract you have, the details need to be clear.
 
You can change the dpi to 3000 and it won't make the slightest bit of difference unless you change the actual pixel size of the image.

A 2000x3000 pixel image saved with an imbedded resolution of 300dpi is exactly the same as a 2000x3000 pixel image with an imbedded resolution of 72dpi.
