I currently process all my images through Adobe Lightroom and Photoshop CS5, including respective plugins such as Nik Sharpener Pro. I now read about Lab Color and think, should I be using it for colour enhancement and sharpening instead?

I have found this which explains it quite graphically. I guess the only way to decide is to use it and see .....

Is that technique achieving anything which you couldn't achieve using the saturation and/or vibrance controls in Lightroom?

I think Lightroom effectively warms inLAB

Oops damn iPhone. Should be Lightroom effectively works in LAB

I believe it works differently to the normal saturation, which affects the whole picture. I thought that there must be something in it with regard to desert and canyon rocks given that a whole book can be dedicated to it [as in the link above]. Sure enough, it does work surprisingly well. The contrast and colour variation is better than can be achieved with RGB. It works wonders on all the variations in rock from light sand to deep reds, and vegetation, but in subtle ways. I haven't used it on other types of photos but there are plenty of examples in the book that show good results. Even complete colour changes - there's an example showing how to turn a blue car in to a yellow one. That said, it isn't suitable for all types of photo.

There's a lot more to it than has been said here. But the basics are fairly quick and simple to achieve.
