Personally I would buy the XT20 with 18-55mm simply because the lens is metal instead of plastic. Optic wise both is superb. OF course 16mm wide end is what you want, then you have no choice.
 
I would buy the 16-50 version, I have both lenses and its surprising how often that extra 2mm at the wide end comes in handy

Quality wise I can discern no difference, if anything the 16-50 is better probably because the ois is more efficient
 
Personal preference I think. I'd opt for the 18-55 as I like to shoot indoor ambient lighting, and the extra stop of light would be more important to me than the extra 2mm width. It's £200 extra though, you could put that towards a nice prime or a nice flash set up

After watching god knows how many youtube reviews and others online, it will be this one. I really look forward to getting it and thanks again folks :)

Sure you will enjoy it, don't forget the ois has to be turned on via the menu and the aperture is changed using the rear dial wheel. I prefer that over the aperture ring of the 18-55mm, lot of others don't though
This is one of my recent photos with the 16-50mm, heavily downsized for showing here, light wasn't great, but thought the details held up well
