What Did You Have For Dinner Today?

Not only did Mrs Nod pay for my Diesel fuel but she also offered to make me a fish pie for me dinner, so I got some undyed smoked haddock and a couple of scallops to make it my ideal one! Can smell it poaching as I type.
Lucky sod, how did you manage to wangle that?

I'm a good husband and provider! Mainly because I have the time to do lots of little things that make her life easier (like giving her a lift to her work so she doesn't have to waste time searching for a suitable space [she would get the bus but it's cheaper to drive down, pay for 2-3 hours of parking then drive home again]).

The fish pie was delicious! Just the smoked haddock, 3 scallops and a handful of prawns, just how I like it.

Haven't had my dinner yet. But my other half made some lasagne sheets and is preparing the sauce etc now. So I am looking forward to a lovely homemade beef lasagne. Only thing pre bought is the mince beef.

Guess what we are having tonight :) all home made.

Made a beef stew with Guinness and dumplings. Cheesey Mashed potatoes and carrot hash mix on the side.

My youngest son is on his way over and he and I will be sitting down to eat as soon as he gets here. Still no alcohol for me but he will have a Guinness or two. :-(

French Onion Soup. Hadn't made it for about 20 years!

Best French onion soup I ever had was served in a hollowed bread bowl with a baked cheese crust top. Delicious.

Nicking that one, Ruth, thanks!

The kids like lamb kofta with cous cous and roasted peppers and onions. Unfortunately they stink the house out when griddling or grilling them and they always fall of the skewers. So last night i thought i'd try the mix in the oven, roasting it in a loaf tin. The kofta meatloaf worked out really well and did not stink the house out. I will be doing it this way from now on.

500g pack of minced lamb
2 garlic cloves
2 teaspoons of ground coriander
1 teaspoon of ground cumin
2 teaspoons of jarred mint sauce (use fresh if you have it)

Roast in a tin for 45-60mins.
