Edit My Images
Yes
It's time I reopened my website again and I want a completely new design. I really like the idea of a very minimal one with the gallery taking up the whole screen, with a navigation bar at top and thumbnails at the bottom, for example the four below:

http://makeup.heatherconlan.com
http://www.nickonken.com/www/#/home/
http://www.aspectphotography.net
http://www.marclabrie.com

No. 4 is a good example of what I want to aim for.

Both of these are flash but I'd prefer to use html as I can actually code that. Can anyone recommend me some gallery software that may be of use?

Loads of wordpress examples. I just feel people would easily be able to get large images from my site so I prefer the smaller images

I think WordPress looks the right way to go. Are there any good free ones out there or hve wordpress themes gone mainly paid now? I've seen a few good ones but all are paid, which I'm fine with as long as I can modify them to what I want without much difficulty. I'd rather not have to pay then find out it doesn't do what I want (or takes a lot of effort to do).

I know what you mean, I'll probably have to upload images up to 2560x1600 but I'll integrate a watermark and some security features (obviously not foolproof). I just think full screen images is the way to go now rather than small thumbnails, just gives more of a wow factor IMO. Otherwise I may as well stay with Flickr.

I guess that is the benefit of flash, at least it's harder to get the image in its original medium however I have no idea where to start with flash and it won't work on iOS devices.

THe ONLY option is to watermark your images as any image is easily downloaded from the web (no matter the security features)

Yep, I understand that, however disabling "save as" thwarts most people.

Any recommendations on good hosts?

I use 1&1 but there are cheaper options
