I've picked up a used mk1 7D. It's in good condition, 39k, could maybe do with a sensor clean and firmware update. I like the in camera RAW processing that comes with the updates. I can do the sensor, but notice that canon offer a service, clean and update for £80. Do we think that's a good price or would anyone do it themselves?

Cleaning the sensor and the firmware update could easily be done by you. However with a service thrown in I would suggest that is good value for money. If you intend to keep the 7D for a long time I would think it worth it.

Apart from a sensor clean and firmware update what else do Canon do during a camera service to warrant a £80 fee

Yes exactly, that's a good question. I understand they clean the mirror and viewfinder screen too and do a few tests but it won't involve any new parts.
