If you've visited this thread, you might have a tree and be stuck with a load of small, unripe fruits at the end of the season - I know we were, so I asked a couple of Cretan friends what they did with them. One just let them drop and rot (he's single and only likes fresh, ripe figs!) but the others came up with a variation on a sweet version.
Cut the stems off (and maybe stab the larger ones through the stem end) and soak in fresh water for a few hours (or overnight).
Drain and cover with enough cold water to keep the fruits covered for 15 minutes of boiling.
Drain and cover again with cold water and boil again for 15 minutes.
Prepare enough simple sugar syrup (equal parts sugar and water [by volume]) to cover the fruits for at least 30 minutes of boiling.
After 15 minutes, add a few cloves (if you like them!) and the juice of 1/2 a lemon and bring back to a gentle simmer for another 15 minutes or so.
Leave to steep in the syrup for a few hours (or overnight) and store in sterilised jars covered with syrup.
They're delicious with a bit of (Greek!) yoghurt or a scoop of vanilla ice cream as well as on their own. Excess syrup makes a good milk-shake, especially with the cloves.
