Understanding HDR

Can someone put me straight on the subject of HDR.I've seen on other threads that say you need 3 different exposure settings for the HDR to work properly.I can understand the reason for this,but i've seen a few action shots like cars etc,shot in HDR.If that is the case then they must be getting the HDR image from a single shot.There's no way they are able to get 3 shots with different exposures on an action shot the subject isn't going to stand still and wait to be captured 3 times.What i want to know is how do i get a good result from using just one shot,i hope this makes sense as i'm still a bit green around the gills.
 
2 ways... use exposure bracketing (Nikon takes 3 exposures at different stops from a single shutter actuation I'm led to believe, Canon you have to click 3 times) or take a single RAW image and expose it a stop up and a stop down in Photoshop or other editing software.
 
I'll tell you if you stop using comic sans and green text :p

Can't one put the camera in burst mode to get it to bracket three shots automatically (when bracketing is enabled, that is)?

Yes, but not with a single click... (on Canon)

Ok let me clarify, with a single prolonged click, but if things are moving quickly, like grass or clouds in the wind, you will still have misalignment of the 3 exposures....
