please can any one tel me how i can get the photos to match
or get the colours to match in photoshop?

Shoot RAW, use a tripod (with panoramic head for about £30/40 will get you the best results)

Shoot manual exposure the same for all the shots and set the white balance to daylight or whatever (not auto) overlap about 30%, that should make it easier for photoshop to sort it out after.
 
i shot in manual - auto white balance

will have to try that
hope that sorts out the brightness probelm in the clouds

Use manual focus as well. Don't have anything on auto because they will be different each shot.
 
I don't see any problems with brightness in the clouds... though its a bit hard to tell at that size.

For stitching, the newer versions of PS are pretty damn good at it if you shoot it anything close to right.

File > Automate > Photomerge

and stick it on auto align, auto perspective and whatnot. Should give you a very decent start point, then you can go in to each layer and manually tweak the masking if need be.
