Hi, I do a lot of Bird/wildlife photography but since I got my 600D my images seem to be a bit soft.

During the day what should be the highest iso I should use?

It depends.
(1) What is the light like?
(2) What aperture are you using?
(3) What shutter speed are you using so that unwanted camera or subject motion is not a problem?
(4) What is the final out put size of your images (eg; large prints or web use)?
(5) Are you shooting RAW?
(6) Are you using, possibly selectively, noise reduction?

Keeping all of the above in mind the lowest ISO possible.
However if need be I will be at near maximum ISO.

Have a look Here Rudi. If you keep track of any threads you start you might get some answers, but a lot a of people cannot even be bothered to do that nowadays. So as previously mentioned, unless you can supply any shooting information people cannot offer much to help you :shrug:
