Canon EOS Utility is capable of timelapse though a bit restrictive in some ways but it is free with Canon cameras so that's a bonus. If you don't mind paying then DSLR Remote Pro has plenty more options but is way too expensive for my liking. I'll be watching this thread just incase anyone can offer anything I havn't heard of.

Do you mean for triggering the camera, in which case I hove no idea, or stitching the images together into a movie?

I would suggest the Lightroom 3 Beta for the second option.

I use the Breeze software linked above and Quicktime pro for stitching images together. Handyavi is another source of info and software

These guys have a forum to get some insight into timelapse, and some very cool videos.

I put them back together in AfterEffects.

On the D200 & D300s I use the camera's built in timelapse function if I'm unable to shoot tethered. If I can shoot tethered I use Nikon Camera Control Pro.

I put all the images into a folder that can be dragged straight into after effects. You can control the amount of time each stays on screen by interpreting the footage at different FPS and controlling the composition frame rate but I'm still learning. That is if you're making a video which I assume you are.
