Tell photoshop to change FFFFFF to another colour

I don't think you can do this 'automatically'. Just curious why you want to do this? If its just whites you want, you'll get jaggies if the colors is vastly different ...
 
Well, iv got some photos of models on an almost white background, and im using quick selection tool to cut out the model, or should I say I select the model and hit ctrl-x and it cuts away the background leaving it pure white, which is ace, it works well and the hair and light looks correct so thats nice.

But what im doing is removing the background, not the model, so now I want to make the left over background a different colour, but i cant seem to figure out how to cut the model away from the back ground instead of the background from model, lol haha im so NOOB, iv played around with + and - to 'change sides' of whats selected but that doesnt seem to work, haha,

So I guess how do I cut the model in the 'same' way as quick selection tool (which works great for me) but remove the model and not the back ground, as I can then paste the model on whatever background i want.

EDIT: I like the ability to add and take away parts of what im selecting, its ni on impossible to do this it seems with magnettic lasso or something similar? sigh

Make a duplicate layer from your BG layer then make a new Transparent layer and place e it between the 2 layers

Duplicate Layer
New Transparent layer
Background Layer

make your selection on the duplicate layer and delete as normal, now you can go to the New Transparent layer and use a gradient fill

Do the selection, then 'invert' it, i.e. select the bit you didnt select (menu select - inverse). then copy and paste onto a new background (either a new document with the background the color you want, or create a new layer in your original image, fill it with the color, then paste the bit you just copied above it.

Edit - beat me to it! To 'edit' your selection, go to Quick Mask (Q on the keyboard), paint in or out what you want, then Q again to get back to marching ants.

To do it without making any selections, the easiest best method (IMO - before i get moaned at :)) is to just use the 'blend if' sliders.
TO DO...
create a sold colour adjustment layer and choose your desired colour (you can edit this later at any time)
place this colour layer below your pic layer (you may have to convert your pic from a bg layer by double clicking it first.)
double click the thumbnail of your image in the layers palette, now slide the top right blend if gray slider to the left.
Hey presto your white will disappear. Use the alt/opt key to separate the slider to make a smooth edge.
when your happy you can go back to your colour layer and fine tune the colour too.,

Non destructive editing and only 1 slider to worry about... :top:
