With white walls it'll be a photon fest everywhere. I'd do the walls black as well as the ceiling... much easier to control the light.
A good compromise may be white walls with black curtains that can be put into place when needed, giving both a studio that works and a cheerful place for visitors
I've worked in black studio and while it's undoubtedly good for lighting, especially products/still life etc, it's like working in a cave. I was also photographed recently in a black studio and it wasn't much fun - I could see nothing but a big bright light with somebody mumbling from behind a hidden camera somewhere in the darkness.
I like the idea of curtains that can be drawn if necessary. Perhaps they could be red/ green/blue stripes that scramble to neutral greyWhat you definitely don't want is bright sun streaming in.

damn this poll! Ive got a ceiling going in my new studio on monday at the cost of £1300 and its WHITE! its all loaded up and ready to go, its about 12 feet up, so it shouldnt be a problem. I hope!
