Street Photography...what to be mindful of?

You're shooting film though its a different ball game. The grain add to the image sensor noise is just butt ugly!:)

I shoot digital too ;) (although, not for street work - other than my iphone)

I have a 550d, so much like the the OP's camera choice. You're right though, if possible I try to never shoot above 800 on my DSLR. But if push comes to shove, I've shot at 1600, with minimal PP the noise is acceptable IMO - especially for on screen viewing.

to go to the complete other end of the scale, I personally think low ISO digital shots for street look awful, in colour anyway. but hey, again another personal preference! it'd be boring if everyone shot in the same way :)

Not too loud. Who is going to buy all the next best things in lenses and bodies. It's all about the equipment you know :)
 
I must agree with Gramps. Most people are only to happy to have their picture taken and if they say no then just respect their right to refuse. Why dont you get yourself a free website and put the pictures on there? You could also consider having some business cards printed with website address ect hand them out to your subjects and let them have a look at your pictures? Then if they ask you to take the pictures off. You never know you may even sell some! Good luck!
