Does anyone have any good tutorials or examples of split toning? I've seen so many times it looks great but never know how to use it really or understand how and when to add it

Neither do I but Scott Kelby's Lightroom books (at least his book for LR2) has a basic section on split toning. His Photoshop books (CS4 at least) have a bit more detail including some specific duo/tri/quadtones that work.

Both photoshop camera raw and lightroom have a split tone option. Another way is to use colour balance on a black and white image, ajust the highlights one colour and the shadows another.
Probably a better way is 2 curves ajustment layers and use blend if sliders but it's more complicated.
My favorite and the easiest is the split tone options in ACR.
