Shooting mono - 20D B/W parameter

I've been experimenting with mono recently and wondered what people 'normally' do?
Do you use the B/W mode (parameter) on the camera when actually shooting or change to mono later in Photoshop? If the latter can someone briefly explain how it's done? Also, can you change to mono on RAW conversion (PS)?
I'm pretty new to DSLRs and Photoshop.

a lot of folk prefer to convert after the shot with digital, there are a couple of useful little tutorials in the tuts. section on it

Always shoot colour & convert to Mono in PS using Channel Mixer method . Another Mono fan....hoorah
