Hi there...so I am reading about the different reflector dics you can get and understand using white ones or the silver ones to reflect the light, say on a portrait. I am not sure what the black one is for though so wondering id someone can explain?

The black one is technically an absorber, not a reflector.
Place it close to the subject to create a darker area. A very good example of this use is when photographing glass, a black absorber will make the edge of the glass dark, helps to give it shape.
 
easy way is to get a 5 in 1, they're a translucent (bit see through) white disk that works to soften the light with a double sided (+2 faces gives 4 sides) cover

black blocks the light preventing it from reflecting to help you control it
white reflects soft light
silver reflects sparkly light
gold reflects warm sparkly light
