RAW software

I have used RAW and liked the results, are there any decent cheap or even better free packages with simple instructions to start me off.

You have a Canon 1100D. Did you get a disk with DPP software, that will have raw converter installed and if it's an older version? Once it.s on your computer, you can always download a later version.

Raw Therapee is quite good if you want a free package:

There are some basic tutorials on the site as well, but the manual is quite useful as well as it explains what each function does in quite good detail.
