Quick sync speed question for 5D mk2 owners

I am still very new to studio lighting. How do i change my flash sync speed. In Custom settings i only have 3 options....Auto 1/200-1/60sec and 1/200 fixed. So how do i change my flash sync speed to say 1/125sec?
Silly question but i'm baffled by all of this. I have Bowens Gemini 500r lights by the way.

flash max sync speed is a fixed property of your camera.

The custom options that you have are for when the camera is setting the flash power and shutter speed automatically when the camera is in P or A mode.

Seeing as with studio lights, you're shooting in manual, just don't take the shutter speed faster than 1/160th second and you'll be fine.
 
Agree with Dave. When shooting in a studio setting, put the camera on manual, select 1/125th as your shutter speed, and select the aperture that will give you the correct exposure.

To use different apertures, you will need to change the output of your lights.

Or change the ISO setting on the camera. I have C1 set to 400 and C2 set to 100 this means I can have f8 at 400 and f4 at 100 and have some easy control over the DOF.
