If I am shooting towelling bibs on a white background, would a single flash light suspended above, firing through a softbox, be enough lighting?
 
No.

Assuming that they're laid flat, you would need an overhead softbox (pointing forward a little) for fill, another, harder light a long way away and in the rimlight position to show the texture and another light as on axis fill.
 
So three lights in total.
Hmm, this is confusing and expensive.
If I use my 550ex on camera, would that help?
Could anyone sketch a simple, cost effective layout for me in laymans terms.
I don't really want to get too involved as I am doing it as a favour and want to try to get reasonable web quality shots cheaply.
 
Couldn't you change the background colour to black? That would make the bibs stand out.
