Quick meal ideas

I don't mind things like rice etc to cook normally opposed to the fast cook versions. Just a bit of ahead thinking, put it on first, then whilst that is on chop up the rest of the meal and cook it, and mostly it will be ready at the same time.
 
Always worth having a few essentials in the freezer and cupboards! Since mrs Nod's vegetarian, whenever she cooks me chilli (I do a good one but hers is MUCH better!) there's loads left over so we freeze 4 or 5 portions. Same with curry etc. Uncle Ben's microwave rices aren't bad and they're sooo convenient - 2 minutes on full power and a parent's brother's called Robert! (Of course, home cooked rice can be frozen and microwaved but is often a bit ghluey.) We also keep a Risotto Pronto pack or 2 in the cupboard. A quick and easy jazz up is a pack of cooked beetroot whizzed up in a little food processor and lobbed in once the basic risotto's up to the boil. Depending on freezer asize, a loaf of bread is a handy space filler (full freezers are apparently more efficient than empty ones) as well as the base for loads of quickie feeds!

It can always be fried in a pan after de frosting, something I always do. You can put bacon bits in the pan and fried up, stick an egg in with it. On a high heat, fry it all mixed together with the rice. Add seasoning to taste, and you have a very Quick and tasty meal. I never get fried rice from the chippy / take away, I always make my own. It helps that I used to do the fried rice, in the take away were I worked. :)

Rice only takes about ten min to cook, five minutes to mature. You could always pop something on the top of the rice while it is boiling, provided the pan is big enough. I used to stick a small tin of sardines still in the tin, and it would cook in the tin from the boiling water of the rice. Both ready at the same time. Another Buick meal idea. :)
 
For health reasons (need a high fibre diet), I always have brown rice which takes rather longer than 10 minutes to cook. For memory reasons, I can't really be left cooking something like that for 1/2 an hour or so without forgetting about it! (Although this situation is getting better, especially if I set a rolling timer on to remind me to check on it!) A tiny freezer means that keeping it stuffed full of pre-cooked rice isn't really an option, so the Uncle Ben's packets have to suffice. When we get the kitchen re-done, I'll make sure the space for the fridge freezer is big enough to accept a decent sized one. Unfortunately eggs aren't an option for me, I wish they were! I can happily eat things like mayonnaise, meringues, cakes etc. which are stuffed full of 'em but a boiled/fried/scrambled egg just bounces. I can handle (and enjoy) the bits that come in take away egg fried rice but that's about the limit of my guts' patience with them. Might have to see if I can build up my endurance for them.

I had problems with most foods, especially fried foods. There was not much I could eat, without getting terrible stomach pains and gastric reflux. Since I have been on Omeprazole the pump inhibitor drug, I can eat practically anything. without too much of a reaction. I know it does not give me carte blanche when it comes to food, but the tablets have helped a lot.
 
I'm fairly sure the egg thing is psychological. Apparently, at the age of 3 or so, I was taken to Austria at easter and was all but force fed eggs in all guises by the staff at the hotel (I've always been completely irresistible to women!!! :D) The idea of scrambled eggs with smoked salmon, omelettes etc. really appeals but I really hate throwing up so am a little reluctant to try.
 
Large handful of spinach, 2 or 3 pieces of frozen pineapple, teaspoon full of coconut oil, 1/2 pint of skimmed milk and a scoop of unflavoured whey protein powder in a smoothie blender, made and drunk in 2 minutes tops.

Sounds really nice and refreshing, as smoothie drink. Not too sure as a meal though.

Everything I consume is a meal. I have at least two of those a day usually as a result of not having time to eat and to keep the calorie intake high, it is so much easier to drink it than actually eat something.
I generally only eat breakfast, lunch and dinner, the shakes fill in the gaps apart from the odd handful of cashew nuts plus pre and post workout shakes.
On non training days, my appetite falls and having the smoothie makes it easy to consume the calories and not feel full up.

Just shows how different we all are, to me that sounds absolutely revolting. However if I was given it I would try it. I'll try anything, might not do it again though.

The missus loves and drools over a kebab, as most of the nation probably does. The site of a kebab, makes me want to vomit.

That just reminded me of another quick meal. Showarma! Pita bread, minced lamb, under the grill with cheese on top and if you like finish with garlic sauce.

Yes eat your greens, it'll make you big and strong ( apparently) but don't drink them FFS!
You may as well drink the water they were cooked in.

Honestly though, we used to liquefy our kids meals when they were babies, so they "ate" what we ate.
This is what it reminds me of, "baby meals" FFS you are supposed to be grown ups. :p

Except for me it's not a fad, it's a dietary requirement to help maintain my calorie intake. To eat every 2hrs can sometimes be somewhat difficult. Having it in a convenient smoothie makes it so much easier. You will probably be really grossed out when I tell you I sometimes also add avocado and beetroot too. That one for some odd reason tastes like chocolate.

Another quick meal! The carrot baby meal was my favourite!

That just reminded me of another quick meal. Showarma! Pita bread, minced lamb, under the grill with cheese on top and if you like finish with garlic sauce.

I normally do a nice Tortilla for me and the missus, and usually consists of chopped lettuce onions and a bit of sliced Chicken. A very quick and hearty tasty meal / snack. Normally ready in about 10 mins.
 
I've also made pizza bread using garlic bread slices, pasta sauce and cheese. :popcorn:

Try making a pizza with a naan bread. Tomatoes - either tinned tomatoes or a pasta, any cheese you have, some herbs - fresh basil or thyme is my preference but you can also use some mixed dried herbs, any veg you have either fresh or in a jar.

Works well on pitta too :-)
