Putting captions on photos in Lightroom

Is there a way of exporting photos with captions written on them in Lightroom, not just in the meta-data?

nope - unless you use the watermarking facility - and export one at a time

You can do it via the print module (print to jpeg) or if you want to keep using the export dialogue you can download the Mogrify plug in, then you can write the caption from the metadata onto the photo.
