Hello all just wondering if any of you have any tips for me just bought a house which I want good photos of each step of the restoration but I want good not just snap shots!!

I've got a 18-55 and tripod

I'd thought in my head to use aperture mode and keep that through out the house then the camera will pick the best shutter speed the the different lightness/darkness of each room ???

I may have to stitch photos of a room as I don't think ill fit a room in with the 18-55 lens
 
As soon as you start to think about stitching you need to be thinking about setting everything to manual - manual exposure and manual focus - and a solid tripod. That way the stitching software (I very strongly recommend MS ICE - it's free and very good) has consistent images to work with. If there's a high dynamic range in the scene, which is more likely for indoor shots and panoramas, you may need to compromise a little on the exposure to get the best overall exposure across the panorama as a whole.

You've got plenty of time to practice the photography as you do the work on the house ;)
 
Shoot with your camera level, to avoid odd perspective (leaning walls, converging verticals). You may need to bracket and HDR or layer mask individual shots as interiors tend to have a large dynamic range, particularly old houses with dark corners and big windows.

Tripod, base ISO, f11-f16 and a cable release would be a good starting point.
