If you are not familiar with it, it is set between the aperture and shutter on the lens and then with a press of a button you lock the two together and can then adjust combinations that give that EV.

I am surprised that more didn't use it as it really is much easier.

Yep, I'm not arguing that a direct EV setting isn't a good thing to have, just that in the vast majority of cases, including the OP's case, it's simply wrong to say that if you're given EV by an app or meter, you've been given a direct setting.

Of course on most metered, relatively modern cameras, you DO have the equivalent of the setting you're talking about; it's called aperture or speed priority, and has the benefit that you don't need to set a new EV if the lighting or scene change, because the camera makes the change for you.
