You can work out exactly where the light is coming from by the shadows.

Flash is always the better option because it takes away the risk of camera shake, it's far more adjustable for power and produces consistent colour, but the type of light doesn't affect the hardness of the shadows - that's just down to distance and size.

If you want harder shadows with more clearly defined shadow transfer edges, just move them further away (higher in your case) For the opposite effect, do the opposite.

I thought this may be the better option - I'm not sure my constant light 2 x 125W bulbs) is powerful enough to get the crisp brightness i want.

Can you recommend some entry level flash heads?

Well, your continuous lights can do the job provided that you're able to exclude all other light from the room - any existing (ambient) light will mitigate (effectively pollute the effect of) your continuous lights, making flash a much better option because flash is many times more powerful.
