how do you remove the camera / lens / exposure settings etc from the meta data info

When you save an image, you can save it without the information if you wish, but I cannot understand why you would want to :shrug:
 
I do it all the time. I don't want clients seeing info about the photo (thats likely irrelevant to them), my cameras and lenses, and most importantly working out the shutter count may not be continuous. You can choose to leave just the copyright info in place when you export from LR. Similar options exist when you save in PS. Just select to include copyright only metadata.

I can sort of understand the merits of a pro doing it in some situations those the reality is that 99% of people that don't deal with photography on a daily basis will not even know such data exists

no, and I sort of agree, but the last thing I need is someone coming back with questions about settings. The other thing is the really important and relevant data is the copyright info

True :thumbs: or as you said in your first post, "well where are the rest of them?" Hence why anyone pro worth his/her pay will rename/number their output

We've told you it can be done, not point telling you how it's done till you give us a clue what software you are using for editing

You can't just do it - no right click on image to edit exif data. You need image editing software that can alter exif information: the example here being lightroom.
 
on my mac i have apeture and cs5
on my laptop i have cs6
