Where do you set your focus when taking shots of large rooms?
 
Assuming you are using a very wide angle lens, such as 20mm on full format, at f8 you can get a depth of field from about 2ft to infinity.

I don't know if this will be of any help as I don't use digital lenses, but I'm assuming your 10mm on a 1.6 crop will be equivalent to a 16mm lens. I have a manual focus 16mm lens which has hyperfocal distance markings on it:

Focus point at 2 metres using f/5.6: infinity down to 1 metre;
Focus point at 1 metre using f/11: infinity down to 0.5 metres;
Focus point at 0.7 metres using f/16: infinity down to 0.35 metres.

I've no idea whether the fact you are using a cropped sensor will have any bearing on the above, I'm afraid.
 
check out the depth of field calculator online, it think the website is DoFmaster, or some such. Bear in mind that you only need to focus as far as the furthest wall, not to infinity. Assume your lens will be zoomed out to 22mm because anything shorter will simply make things better, and aim to keep your aperture in the f8 to f11 range rather than risk running into diffraction. You need a tripod, of course.
