I had a go a while back - ill do a search and find what I used. - I found it a bit difficult, and wish i'd taken a "top" layer and a bottom layer of pics.
I tried doing on by hand in photoshop once....was a bit fiddly to say the least - so would recommend trying some software (if you didnt) and just take the photos so they overlap a fair bit to give you plenty to play with, and always take more than you need - you can crop later. Also make sure you are set to fully manual and try and find a good compromise in exposure, apature....etc to cover the whole room - dont change it from shot to shot.
I've found Panorama Factory the easiest to use and so far it has given pretty good results, the wizard interface is quite intuitive but you can also manually stitch which I think gives better results but takes a bit longer.
If you Google it you can download a trial version.
Manual everything! Including white balance.... OK, you can use autofocus if you must.... Bear in mind the distortions introduce by different focal length lens.... maintain a very large overlap if you can, that way distortion effects will be minimised....
Other than that, all of the above is sound advice...
I used Panoram Factory to do this one , from what I remember it was 5 or 6 images taken in portait mode using my 300D + kit lens. I still haven't got round to sorting the sky , the polarizer gave me curves in the corners of each shot
Got to say Nath - I've not tried it neither - just the advice I was given when I asked a similar question - but I think Mr Gubby has it on the nose - Thats the way I was thinking.
And it was Pan Factory that I used - after trying many other i found that it was the easiest to use.
