There are various packages out there to help you assemble, but generally I find doing it yourself is best.
There are a few main areas of troublesomeness for all methods and packages.
1. Gradients in the light, colour changes etc in each individual image. (They don't always match even when you shoot fixed manual which you must try to do.)
2. lens distortion, anything with a focal length less than 50mm will bend the images. I shoot all my pans with a wide ish lens, (mines are about 24-42) ish, as do most people I reckon.

This is one of my early attempts....
I've opened a new large canvas in PS and then cut and pasted my three un-edited tiffs onto it. When you do this, the images will appear on different layers.
You can adjust each layer with the 'transform' tools.
Move layers on top of each other by sliding them around.
You can also mask out parts of the layers (mask tool) ...I didn't know this when I did this beast though.

As you can see .... I didn't quite manage it, lens distortion, the curves ... took me flippin hours, loved every second :nuts:...thats not quite true. :bang:

Tip: don't choose a double rainbow as your one of your first attempts.
Good horizontal and vertical elements make it easier to line things up, so a typical landscape with an horizon, trees, mountains, buildings etc will work well.
You can also use a singular perspective to add effect.... This is six shots, 3 top , 3 bottom.
