OCCF, dark background

Sorry if this has been covered before.

I have a 7d and 580 flash. How can I take images of the subject correctly exposed and the background dark? (I only shoot manual for still life, I currently shoot in AV).

Any help appreciated.

Just don't let any light reach the background, any background will be black if it's completely unlit.
 
Have a read of the Speedliter's handbook by Syl Arena. Great read. Also has videos on youtube.

IIRC, shutter speed controls ambient exposure and aperture controls flash exposure. When I messed around with OCF, I would increase shutter speed until the background was virtually dark and then use a combo of aperture and manual flash to control the flash exposure. You can manipulate flash light using flags, snoots, grids etc.
